This Past (2) MONTHS I’ve Tried…Week of 4/30/18

So what, I’m not a consistent blogger, and your point?  No one is paying me to do this!  Okay, I am insecure about my intermittent blogging, but I do have lots to share with you because of it :).  A little tid bit, Eric and I went to visit his family in Boulder, CO this past month and were introduced to the amazing (AIP/Paleo Friendly) restaurant Blooming Beets. I could sing their praises all day, it was so wonderful to have delicious and compliant foods to eat that I didn’t have to spend (2) hours cooking!  Also, shout out to Eric’s family for being so accommodating and open to trying it (and liking it) XOXO.

Onto the good stuff, now I can’t quite remember all of the new recipes I tried, but below are the most notable.  Enjoy and give health a chance, won’t you?

PALEO CHICKEN EMPANADAS, recipe here!

Cost: $27 – Way too expensive

Rating (1-10): 10

Review: These empanadas were soooo good, I have been craving an empanada for (9) months and this satiated every bit of that craving.  Most AIP/Paleo dishes are slightly different than the real thing, but it doesn’t make it any less delicious in this case.  There is a ton of prep work involved, so I won’t be making these too often, but they are worth it.

Notes: $27 – way to expensive if you haven’t accumulated these ingredients like I have, but if you really want an empanada then be my guest and splurge (just a warning).  I also whipped up some chimichurri sauce to go with these bad boys. I had all of the ingredients around, it’s super simple, recipe here!  I excluded the red pepper flakes on the chimichurri recipes and they both came out delicious.

Cost: $29 – $60

Rating (1-10): 10

Review: I was feeling extremely contrary about dinner the night I made these guys, nothing was going to make me happy, but these fish tacos did the impossible (if you know me, you know what I mean).  They were every bit as good as a regular fish taco, but so much healthier.  The prep time was actually not as bad as I thought it would be and everything, including my side veggie, took about 45 minutes.  I highly recommend these yummy tacos!

Notes: $29 – $60 for 3-4 meals depending on the ingredients you have around (as usual), the cassava and tigernut flours are pricey and that’s what accounts for the $60, but I already had both in my pantry. I also made the white sauce from this recipe at the Emancipated Epicure, which was delicious, I only needed to buy the coconut cream.

EASY PALEO BEEF STROGANOFF (AIP), recipe here!

Cost: $33

Rating (1-10): 9

Review: I know this dish doesn’t look particularly pretty, but it is so good and hearty, just like its traditional counterpart.  I never really ate that much beef stroganoff, I preferred my pasta doused in tomato sauce, but this was calling to me!  I am so glad I tried it because it was delicious, and the sweet potato starch noodles were perfect.

Notes: $33 for roughly 4 meals, I bought a (2) pack of the noodles on Amazon, here, and they lasted me through (4) rounds of this recipe, so the follow up meals will only cost you about $23.

INSTANT POT MAPLE TAMARIND RIBS (PALEO, AIP), recipe here!

Cost: $16 – $43

Rating (1-10): 9

Review: Sometimes you just want some messy bbq ribs and these babies are quick, easy, and full of flavor.  I wasn’t sure about cooking ribs in the instant pot, but dang did it do what it advertises.  I highly recommend these and they are great for barbecues, I know they can be minefield for anyone on a modified diet!

Notes: $16 – $43 for 3-4 meals, I have most of the ingredients in my arsenal at all times (i.e. bone broth, maple syrup, thyme, etc.), but buying them drives up the price a bit. However, totally worth it and you’ll certainly get a lot of use out of these ingredients with other recipes!

QUICK AND EASY MAPLE-GLAZED PEACH SHRIMP, recipe here!

Cost: $27 – $40

Rating (1-10): 8

Review: I know, this picture is terrible, but the dish itself was bomb!  I was never a big shrimp eater growing up but I have become a lover in my adulthood. This dish is sweet and spicy, full of so many fun flavors.  If you like shrimp, go make this tonight, it’s quick and yummy!

Notes: $27 – $30 for about 4 meals (without a side), I recommend getting fresh shrimp, I’ve prepared from frozen and it’s just not the same.  That, or make sure your shrimp is fully thawed before marinating and cooking.

Cost: $10-$15

Rating (1-10): 7

Review: I keep it pretty boring with my side carbs and veggies, I like to put my love into the main dish, but these roasted beets are both easy and delicious.  If you don’t like beets, I don’t know what to tell you, but beets are so full of essential nutrients, I try to eat them at least once a week (although I don’t always succeed in that endeavor).   Give them a whirl along with just about any meat/main dish!

Notes: $10 – $15 depending on the ingredients you have and you should make sure to cut them a bit smaller so they’ll cook faster.

REINTRODUCTIONS: Cashews and Grass-Fed Cheddar

The grass-fed cheddar didn’t go perfect and cashews (all nuts really) have been fine so far.  I likely won’t be having grass-fed cheddar often, but I can’t expect everything to go well!  I want to also mention that red wine is a definite no-go for me, which is sad because I loved it so much. However I can have white wine and ciders no problem.  You have to look at the positive side of things, alcohol is still on the table, yes!

I hope you’re willing to try one of these dishes, why not this week?  Is today the day you choose yourself, your health, over convenience?  Are my questions sounding pretentious? Good, that was the goal!  But seriously, today is the best day to start feeling better.
