This Week (Month?) I Tried…February 26th Edition

I promise I am still on the wagon, I just haven’t posted in awhile.  I’ve been sick since the beginning of February and feeling sorry for myself, so the first thing to go is the writing.  Today is the first day I feel pretty normal!

Below is a smattering of meals, snacks and reintroductions I’ve had over the past month :).


Cost: $30 – $46

Rating (1-10): 6

Review: These pork chops were extremely flavorful and juicy, I used pork chop loins (boneless in this case) from my Butcher Box, they worked great.  There are still some meat recipes I don’t go nuts for, and pork chops are one of them, but I am always open to trying new recipes!

Notes: $30 – $46 for 2-3 meals and as I always say the price depends on the ingredients that you have.  The Butcher Box meat is quality and get’s me through roughly two weeks of meals, that’s about $60/week, which for quality meat is a great deal.  Plus you get free bacon with every purchase if you signed up in 2018!


Cost: $8 – $15

Rating (1-10): 8

Review: These were SO delicious, I honestly don’t even remember what the steak recipe was (it was pretty meh), but I’ll remember the mashed potatoes! Be sure to buy white sweet potatoes, they’re not as sweet/strong as orange sweet potatoes and they look more like the real thing ;).

Notes: $8 – $15 depending on the ingredients, but these could last you as a side for 4-5 meals and are very filling.  They are extremely helpful in getting your daily dose of healthy carbs!


Cost: $10 – $27

Review: I can’t take any credit for these babies created by Eric.  He has really wanted to cook for me and being the control freak that I am I resisted!  But I’ve been sick and tired this last month so I relented and I am so glad I did.  These breakfast burritos were just as good if not better than the “real” thing.  Of course eggs were a reintro for me, but everything else is AIP…bacon, yellow onions, and homemade cassava flour tortillas!

Notes: $10 – $27 and really depends on if you have cassava flour, which is pretty pricey.  It lasts a long time and comes in handy for more savory baked/fried items.


Cost: $40 – $55

Rating (1-10): 6

Review: I really love slow cooker or Instant Pot meals because they’re super easy and last for days.  One down side is that I get very bored of pot roast…very fast.  Hence the low rating, but overall this pot roast is solid and flavorful.  I especially loved the sweet potatoes and carrots!

Notes: $40 – $55 for 4-5 meals and depends on the ingredients you have.  Again, I used a 2.2 lb roast from my Butcher Box.  It’s really nice to have the meat guide your weekly meals, it takes some of the guess work out of meal planning/prepping.

Review: I really miss pizza, so so much, and I had to try these pizza bites by Michelle Hoover over at Unbound Wellness.  Michelle always manages to make hers look so much better and I didn’t get a photo of my own (you’re not missing anything)…amateur v. professional.  Like I’ve said…you will NEVER match the taste of a real pizza, but these are a good alternative.

Notes: $5 – $60 but only if you’re just starting out, I had most of these ingredients handy.  The only thing I bought was the Italian seasoning and the KC Naturals Pasta Sauce, which I’ll talk more about below.


Cost: $37

Review: Making your own nightshade-free sauces at home is time consuming and never ending, thank god for KC Naturals. After hearing about them for so long I finally took the plunge and bought them on Amazon.  The pasta sauce and Mastodon BBQ sauce are sooooo good.  Their ketchup is OK, but I prefer the version I found at He Won’t Know it’s Paleo.  I have yet to try the Primal Cherry BBQ sauce, but I’ll keep you updated.

Notes: $37 for the (4) sauces on Amazon prime, I highly recommend giving them a shot, less prep time for you and delicious additions to your meals.  I think I am going to make BBQ ribs with the Mastodon sauce soon!


Not sure yet if goat cheese went well, the first time was in the midst of me getting sick so I thought that might be the cause, but I tried it again this weekend and no issues. Chestnuts went A-OK as I suspected, all of my nut reintros have been without incident.  I’ll have to monitor the “cheese” issue lol.

I am sorry to you, but mostly myself because I am pretty sure I am the only one that noticed, that I haven’t posted in awhile.  I hope you get some use out of these recipes and open yourself up to trying something new.  Healthy eating isn’t just for folks with autoimmune diseases, it’s not propaganda, it will make you feel better!  😉
